All American Skinny Chili

Makes 6 servings – double the recipe for a crowd

Ingredients

  • tsp olive oil
  • tsp minced garlic
  • 1/4 cup green bell pepper, diced
  • 1/4 cup red bell pepper, diced
  • 1/4 cup white onion, diced
  • lb. extra lean ground beef *
  • 1-14 oz. can petite diced tomatoes, undrained
  • 1-14 oz. can diced tomatoes and green chiles, undrained
  • 1-14 oz. can of Great Northern beans, drained
  • tbsp tomato paste
  • tbsp chili powder
  • tsp cumin
  • 1/4 tsp salt (optional)

Directions

  1. Add olive oil to large stockpot over medium high heat.
  2. Add garlic, peppers and onion. Stir frequently until softened, approx. 2-3 minutes.
  3. Add ground beef to the stockpot and cook until browned.
  4. Add the last 8 ingredients to the pot, stir and cover.
  5. Simmer for 20 minutes.

* Vegetarian option: omit ground beef and substitute 1-14 oz can black beans, drained
