All American Skinny Chili
Makes 6 servings – double the recipe for a crowd
Ingredients
- tsp olive oil
- tsp minced garlic
- 1/4 cup green bell pepper, diced
- 1/4 cup red bell pepper, diced
- 1/4 cup white onion, diced
- lb. extra lean ground beef *
- 1-14 oz. can petite diced tomatoes, undrained
- 1-14 oz. can diced tomatoes and green chiles, undrained
- 1-14 oz. can of Great Northern beans, drained
- tbsp tomato paste
- tbsp chili powder
- tsp cumin
- 1/4 tsp salt (optional)
Directions
- Add olive oil to large stockpot over medium high heat.
- Add garlic, peppers and onion. Stir frequently until softened, approx. 2-3 minutes.
- Add ground beef to the stockpot and cook until browned.
- Add the last 8 ingredients to the pot, stir and cover.
- Simmer for 20 minutes.
* Vegetarian option: omit ground beef and substitute 1-14 oz can black beans, drained
